Prepare the Apples

Roast the Apples
Preheat your oven to 375°F (190°C). Core and slice the apples into thin wedges. In a bowl, toss the apple slices with honey and cinnamon. Spread them on a baking sheet and roast in the preheated oven for about 15-20 minutes, until tender and slightly caramelized.
Make the Grilled Cheese

Assemble the Sandwich
Spread butter on one side of each slice of Big Country Bread. On the unbuttered side of two slices, layer the roasted apples and slices of Brie cheese. Top with the other two slices of bread, buttered side out.

Prepare the Salad or Fries

If Making Salad
In a large bowl, combine mixed greens. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper to taste. Toss gently to combine.

If Making Fries
Preheat your oven to 425°F (220°C). Cut the potatoes into fries and spread them on a baking sheet. Drizzle with olive oil, season with salt and pepper, and toss to coat. Bake for 25-30 minutes, flipping halfway through, until crispy and golden.
