Peking Duck Preparation

Preparing the Duck
Start by thoroughly cleaning the duck, removing any feathers or innards. Pat it dry with paper towels.

Blanching the Duck
In a large pot, bring the water to a boil. Carefully lower the duck into the boiling water and blanch for about 5 minutes. Remove and let it drain.

Applying the Glaze
In a bowl, mix honey, soy sauce, rice vinegar, five-spice powder, and salt. Brush this mixture all over the duck, ensuring an even coating.

Drying the Duck
Hang the duck in a cool, dry place, or place it in the refrigerator uncovered for at least 4 hours or overnight to allow the skin to dry out.

Roasting the Duck
Preheat the oven to 375°F (190°C). Place the duck on a roasting rack in a roasting pan and roast for about 1 hour and 30 minutes or until the skin is crispy and golden brown.

Preparing the Garnishes
While the duck is roasting, slice the cucumber into thin strips and chop the green onions.

Serving
Once the duck is done, let it rest for 15 minutes. Carve the duck and serve with hoisin sauce, cucumber, green onions, and Chinese pancakes.
