Prepare the Cherry Sauce
In a large skillet, melt the butter over medium heat. Add the pitted cherries and granulated sugar. Cook for about 5-7 minutes until the cherries are softened and the sugar dissolves.
Add Vanilla
Stir in the vanilla extract and continue to cook for another 2 minutes until well combined.
Flambé the Cherries
Carefully add the dark rum to the skillet. Using a long lighter or match, ignite the rum to flambé. Allow the flames to subside as the alcohol burns off, which should take about 1-2 minutes.
Serve
Spoon the warm cherry sauce over individual scoops of vanilla ice cream and serve immediately.
