Eclair Preparation

Make the Choux Pastry

In a saucepan, combine water and butter. Heat until boiling. Remove from heat and add flour and salt all at once. Stir vigorously until mixture pulls away from the sides of the pan and forms a ball.

Add Eggs

Allow the mixture to cool slightly. Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe the Eclairs

Preheat the oven to 400°F (200°C). Use a piping bag fitted with a large round tip to pipe 4-inch long lines of dough onto a baking sheet lined with parchment paper.

Bake

Bake for 20-25 minutes until puffed and golden brown. Do not open the oven door while baking.

Cool

Remove from the oven and let cool completely on a wire rack.

Fill with Cream

Once cooled, fill the eclairs with pastry cream or whipped cream using a piping bag.

Glaze (optional)

Dip the tops of the filled eclairs in melted chocolate or glaze as desired.
