A grilled sourdough melt with hand-breaded crispy chicken, hardwood smoked bacon, a fried egg, melted pepper jack cheese and a touch of chipotle mayo. Served with a side of crispy BW breakfast potatoes.

Brunch Melt Directions

    Prepare the Chicken

    Season the chicken breasts with salt and pepper. Dredge each piece in flour, dip in beaten egg, and coat with panko breadcrumbs. Set aside.

    Cook the Chicken

    In a large skillet, heat cooking oil over medium heat. Add the breaded chicken and cook for about 5-6 minutes on each side or until golden brown and cooked through. Remove and let drain on paper towels.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove and drain on paper towels.

    Fry the Egg

    In the remaining grease, crack the egg and fry to your desired doneness (sunny side up or over easy).

    Assemble the Melt

    Spread chipotle mayo on one side of each slice of sourdough. On two slices, layer the crispy chicken, bacon, pepper jack cheese, and the fried egg. Top with the other slices, mayo side down.

    Grill the Melt

    In the same skillet, add butter and heat over medium-low. Grill the sandwiches for about 3-4 minutes on each side until golden brown and the cheese is melted.

    Prepare the Potatoes

    While the melts are grilling, boil the breakfast potatoes until tender, then drain and season with salt and pepper.

    Serve

    Slice the Brunch Melt in half and serve with a side of crispy breakfast potatoes.
