Prepare the Dough
In a mixing bowl, combine warm water, yeast, and granulated sugar. Let it sit for about 5 minutes until frothy. Add flour, salt, and melted butter, and mix until a dough forms. Knead for about 5 minutes until smooth.

Let the Dough Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 1 hour or until it has doubled in size.

Shape the Pretzel Bites
Preheat oven to 425°F (220°C). Once risen, punch down the dough and divide it into small pieces (about 1 inch each). Roll each piece into a ball and set aside.

Prepare the Baking Soda Bath
In a large pot, bring 8 cups of water and baking soda to a boil. Carefully drop the pretzel bites into the boiling water for 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Bake the Pretzel Bites
Bake the pretzel bites in the preheated oven for 12-15 minutes or until golden brown.

Toss in Cinnamon Sugar
Mix cinnamon and brown sugar in a bowl. Toss the warm pretzel bites in the cinnamon sugar mixture until well coated.
