    Prepare the Tri-tip

    Preheat your grill or oven to medium-high heat. Season the tri-tip roast with salt and black pepper on all sides.

    Cook the Tri-tip

    Grill or roast the tri-tip for about 20-25 minutes per side, or until it reaches your desired doneness. Remove from heat and let it rest for 10 minutes before slicing.

    Grill the Onions

    While the tri-tip is resting, slice the onion and sauté it in olive oil over medium heat until caramelized, about 10-15 minutes.

    Toast the Buns

    Cut the potato buns in half and toast them lightly on the grill or in a toaster until golden brown.

    Assemble the Sandwich

    Slice the rested tri-tip thinly against the grain. Spread garlic mayo on the toasted buns, layer with sliced tri-tip, topped with grilled onions and Swiss cheese. Optionally, place the sandwich back on the grill for a minute to melt the cheese.
