Pulled Pork and Coleslaw

Preparation and Assembly

Prepare the Pulled Pork
Rub the pork shoulder with salt and pepper. Place it in a slow cooker, cover it with BBQ sauce, and cook on low for 8 hours or until tender.

Make the Coleslaw
In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, celery seed, salt, and pepper. Mix well and refrigerate for at least 30 minutes.

Toast the Buns
Slice the potato buns and toast them lightly on a skillet or in a toaster.

Assemble the Sandwiches
Shred the cooked pork and pile it onto the bottom half of each toasted bun. Top generously with coleslaw and place the top bun on. Serve immediately.
