Preparation of Ribs

Prepare the Ribs
Remove the membrane from the back of the ribs and trim any excess fat. Apply a thin layer of yellow mustard over the ribs to help the rub adhere.

Apply the Rub
Generously coat the ribs with pork rub, ensuring all surfaces are covered. Let the ribs sit at room temperature for about 30 minutes.

Smoke the Ribs
Place the ribs in the smoker bone side down. Add soaked wood chips to the smoker box and smoke for approximately 5-6 hours, spraying with apple juice every hour.

Check for Doneness
The ribs are done when the meat has pulled back from the bones and a toothpick slides in and out easily. Internal temperature should be around 195°F (90°C).

Prepare Coleslaw
In a large bowl, mix together shredded cabbage, carrots, and coleslaw dressing. Refrigerate until ready to serve.

Heat Baked Beans
In a saucepan, heat baked beans over medium heat until warmed through. Serve hot alongside the ribs.
Serving

Serve the Ribs
Once the ribs are done, let them rest for 10-15 minutes before slicing. Serve with coleslaw and baked beans on the side.
