    Prepare the Prime Rib

    Season the prime rib roast with salt and pepper. Smoke it at 225°F (107°C) for approximately 2-3 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Let it rest for 15 minutes before slicing thinly.

    Cook the Vegetables

    In a skillet over medium heat, sauté the sliced onions until caramelized, about 10 minutes. Add the sliced mushrooms and cook for an additional 5 minutes until tender.

    Assemble the Sandwiches

    On each toasted hoagie roll, layer slices of the smoked prime rib, sautéed mushrooms and onions, and top with a slice of pepper jack cheese.

    Melt the Cheese

    Place the assembled sandwiches under a broiler for 2-3 minutes or until the cheese is melted and bubbly.

    Serve

    Spread horseradish sauce on the inside of the top roll and serve with au jus for dipping.
