Prepare the Nacho Cheese
In a saucepan over medium heat, melt 2 tablespoons of butter. Add 2 tablespoons of flour and whisk until smooth. Slowly pour in 2 cups of milk while continuing to whisk. Once the mixture thickens, add 2 cups of shredded cheddar cheese and stir until melted and smooth. Season with salt, pepper, and a pinch of cayenne if desired.

Layer the Nachos
On a large baking sheet or oven-safe platter, spread out the tortilla chips in an even layer.

Add Toppings
Spoon the homemade nacho cheese over the tortilla chips evenly. Then, add the cooked meat of your choice, jalapenos, pico de gallo, and drizzle with sweet BBQ sauce.

Bake
Preheat your oven to 350°F (175°C) and bake the nachos for about 10-15 minutes, or until the cheese is bubbly and the chips are slightly golden.

Remove from the oven and top with dollops of sour cream. Serve immediately.
