Method

Preparation

  1. 1

    Cook the Potatoes

In a large pot, add the potatoes and cover them with water. Bring to a boil over medium-high heat, then reduce to a simmer. Cook the potatoes until fork-tender, about 15-20 minutes. Drain and let cool.

  2. 2

    Chop the Vegetables

While the potatoes are cooling, finely chop the celery, red onion, and hard-boiled eggs. Set aside.

Dressing Preparation

  1. 3

    Mix the Dressing

In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, black pepper, and fresh dill. Mix well until smooth.

Combining Ingredients

  1. 4

    Combine All Ingredients

Once the potatoes are cool, chop them into bite-sized pieces. Add the chopped potatoes, celery, red onion, and hard-boiled eggs into the bowl with the dressing. Gently fold the ingredients together until well-coated.

  2. 5

    Chill the Salad

Cover the potato salad and refrigerate for at least 1 hour to let the flavors meld before serving.
