Method

Pudding Preparation

  1. 1

    Make the Pudding Base

In a medium saucepan, combine 3 cups of sugar, 1 cup of all-purpose flour, and 1 tsp of salt. Whisk together until well blended.

  2. 2

    Add Milk and Cook

Gradually add 4 cups of milk to the dry mixture, whisking constantly to avoid lumps. Place the saucepan over medium heat and cook the mixture, stirring frequently until it thickens and starts to bubble (about 10 minutes).

  3. 3

    Incorporate Egg Yolks

In a separate bowl, whisk together 4 large egg yolks. Slowly add about 1 cup of the hot pudding mixture to the yolks to temper them, whisking constantly. Then, pour the egg yolk mixture back into the saucepan, stirring well. Cook for an additional 2-3 minutes.

  4. 4

    Add Vanilla

Remove the saucepan from heat and stir in 2 tsp of vanilla extract until well combined. Transfer the pudding to a bowl and cover it with plastic wrap, pressing it directly against the surface to prevent a skin from forming.

Layering the Pudding

  1. 5

    Prepare the Bananas and Wafers

Slice the 4 medium ripe bananas into thin rounds. Open the box of vanilla wafers.

  2. 6

    Layer the Ingredients

In a large serving dish, create layers starting with a bottom layer of vanilla wafers, followed by a layer of banana slices, then a layer of pudding. Repeat the layers until all ingredients are used, finishing with a layer of pudding on top.

Topping the Pudding

  1. 7

    Add Whipped Cream

Spread 2 cups of whipped cream over the top layer of pudding, smoothing it out evenly.

  2. 8

    Chill and Serve

Cover the dish with plastic wrap and refrigerate for at least 4 hours (or overnight) to allow the pudding to set. Serve chilled.
