For Yucca Fritas

Prepare the Yucca
Peel the yucca and cut it into 1-inch pieces. Rinse them under cold water to remove any excess starch.

Drain and Cool
Once cooked, drain the yucca and let it cool for about 10 minutes. Once cool enough to handle, cut the yucca into fries or strips.

Heat the Oil
In a heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Yucca
Carefully add the yucca strips to the hot oil in batches, frying them until they are golden brown and crispy, about 3-5 minutes per batch.

Drain and Season
Remove the fried yucca with a slotted spoon and drain on paper towels. While still hot, sprinkle with salt and paprika.
For Chipotle Aioli

Combine Ingredients
In a medium bowl, combine mayonnaise, chipotle peppers (chopped), lime juice, and minced garlic.

Mix Well
Stir the mixture until all ingredients are well combined and the aioli is smooth. Adjust salt to taste.

Chill
Cover and refrigerate the chipotle aioli for at least 30 minutes to allow the flavors to meld together.
