Preparation of Filling
Sauté Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
Stir in Roasted Corn
Fold in the roasted corn, season with salt and black pepper to taste, and cook for an additional 2 minutes. Remove from heat and set aside.
Assembling Enchiladas
Preheat Oven
Preheat your oven to 375°F (190°C).
Prepare Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable. This will make them easier to roll.
Fill and Roll Tortillas
Place a generous amount of the vegetable filling in the center of each tortilla. Roll the tortilla tightly and place it seam-side down in a baking dish.
Baking Enchiladas
Add Salsa Verde
Once all the tortillas are filled and placed in the baking dish, pour the salsa verde evenly over the top.
Top with Cheese
Sprinkle the cheese evenly over the salsa verde.
