Cook the Steak

Season the steak with salt, black pepper, cumin, and paprika. Grill the steak over medium-high heat for 5-7 minutes on each side or until it reaches your desired doneness. Remove from heat and let it rest before slicing.

Cook the Grilled Chicken

Season the chicken breast similarly with salt, black pepper, cumin, and paprika. Grill for about 6-8 minutes on each side until cooked through. Allow to rest before slicing.

Cook the Chorizo

In a skillet over medium heat, cook the chorizo until it is browned and cooked through, about 5-7 minutes. Drain any excess fat.

Prepare Tortillas

Warm the corn tortillas in a dry skillet or microwave until pliable.

Assemble Enchiladas

Take a tortilla and fill it with a mix of sliced steak, grilled chicken, and cooked chorizo. Roll the tortilla tightly and place seam side down in a baking dish. Repeat this process with all tortillas.

Toppings and Serving

Add Toppings

Slice the sweet plantains and fry them in a pan until golden brown. Top the enchiladas with diced onions, fried plantains, and crumbled queso fresco.

Drizzle with Crema

Finally, drizzle crema over the top of the enchiladas and garnish with fresh cilantro.

Serve the enchiladas warm with additional crema on the side if desired.
