Steak Asada

Marinate the Steak
In a large bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and black pepper. Mix well.

Prepare the Steak
Add the flank steak to the marinade, making sure it is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for best flavor.

Cheese Enchiladas

Prepare Enchiladas
Preheat the oven to 350°F (175°C). In a skillet, heat some oil over medium heat and lightly fry the corn tortillas until soft.

Assemble Enchiladas
Fill each tortilla with a handful of shredded cheese and roll them up. Place the rolled enchiladas seam-side down in a baking dish.

Add Sauce and Bake
Pour the red enchilada sauce over the top of the rolled enchiladas and sprinkle with additional cheese. Bake in the preheated oven for 20 minutes until the cheese is melted and bubbly.

Serve hot with a dollop of sour cream on top.

Sauté Rajas
In a skillet, add a little oil and sauté the sliced poblano peppers and onions until they are soft and slightly caramelized, about 7-10 minutes.

Prepare Guacamole
In a bowl, mash the avocados and mix in lime juice and salt to taste. Adjust seasoning as needed.

Prepare Yellow Rice
Cook the yellow rice according to package instructions. Typically, this involves boiling water, adding rice, and simmering until cooked through.

In a small saucepan, heat the canned black beans over medium heat until warmed through. Season with salt if desired.
