Steak Asada

    Marinate the Steak

    In a bowl, combine lime juice, minced garlic, cumin, salt, black pepper, and olive oil. Add the flank steak and marinate for at least 30 minutes, preferably overnight.

    Charbroil the Steak

    Preheat the grill to high heat. Grill the marinated flank steak for about 5-7 minutes on each side, or until desired doneness is achieved. Remove from the grill and let rest for 5 minutes before slicing against the grain.

Cheese Enchilada

    Prepare Enchiladas

    Preheat the oven to 350°F (175°C). In a pan, heat enchilada sauce until warm. Soften corn tortillas by briefly frying them in hot oil, or by wrapping them in a damp cloth and microwaving for 30 seconds.

    Fill and Roll

    Fill each tortilla with shredded cheese, roll them up, and place them seam-side down in a baking dish. Pour the warm enchilada sauce over the top and sprinkle with additional cheese.

    Bake

    Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Guacamole

    Prepare Guacamole

    In a bowl, mash the ripe avocados with lime juice, minced garlic, and salt. Stir in chopped cilantro and diced onion until well combined.

Rajas

    Cook Rajas

    Heat olive oil in a skillet over medium heat. Sauté sliced poblano peppers and onion until softened, about 5-7 minutes. Season with salt to taste.

Crema

    Prepare Crema

    In a small bowl, mix sour cream with lime juice and salt. Adjust seasoning to taste.
