Marinating the Pork

Combine Ingredients
In a large bowl, combine the pork shoulder slices with pineapple juice, white vinegar, minced garlic, chili powder, ground cumin, dried oregano, salt, black pepper, ancho chili powder, chipotle pepper, and sugar.

Mix and Marinate
Mix everything well until the pork is fully coated with the marinade. Cover the bowl with plastic wrap or transfer the pork to a resealable bag.

Refrigerate
Let the pork marinate in the refrigerator for at least 2 hours, but preferably overnight for maximum flavor.
Cooking the Pork

Preheat Grill/Skillet
Preheat your grill or a large skillet over medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off.

Cook the Pork
Grill or cook the pork slices for about 4-5 minutes on each side, or until they are well caramelized and cooked through.

Rest and Slice
Once cooked, remove the pork from the heat and let it rest for a few minutes before slicing into smaller pieces.
