Prepare the Tacos

    Cook the Meat

    In a skillet, heat the olive oil over medium heat. Add the ground beef or shredded chicken. Sprinkle taco seasoning over the meat and cook until fully cooked (about 8-10 minutes for ground beef, 5-7 minutes for shredded chicken), stirring occasionally.

    Prepare the Toppings

    While the meat is cooking, prepare your taco toppings. Chop the onions, slice the jalapeños, and shred the lettuce. Keep them in separate bowls for easy serving.

    Warm the Tortillas

    In a separate skillet, heat the soft corn tortillas over medium heat for about 30 seconds on each side or until warm and pliable.

    Assemble the Tacos

    On each warmed tortilla, place a portion of the cooked meat and top with pico de gallo, shredded lettuce, chopped onions, sliced jalapeños, shredded cheese, sour cream, and guacamole.

Prepare the Rice and Beans

    Cook the Rice

    In a saucepan, bring the vegetable broth to a boil. Add the long grain white rice, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the liquid is absorbed.

    Open the canned black beans and rinse them under cold water. Heat them in a small saucepan over low heat until warmed through. Optionally, you can add salt to taste.
