Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Marinate the Ingredients

Cut the striped bass and battered steak into bite-sized pieces. Slice the chorizo into rounds. Place the striped bass, battered steak, chorizo, and shrimp in separate bowls and pour the marinade over each. Ensure they are well-coated. Cover and refrigerate for at least 30 minutes.

Assembly

  1. 3

    Prepare the Skewers

Remove the marinated ingredients from the refrigerator. Preheat your grill or grill pan over medium-high heat. Take the soaked wooden skewers and thread the marinated striped bass, battered steak, chorizo, and shrimp onto the skewers, alternating between the different proteins.

  2. 4

    Coat with Coconut Flakes

After threading the skewers, roll each skewer in the coconut flakes until well-coated.

Cooking

  1. 5

    Grill the Skewers

Place the skewers on the preheated grill. Cook for about 6-8 minutes, turning occasionally until the shrimp is opaque, the steak is cooked through, and the striped bass flakes easily with a fork.

Serving

  1. 6

    Serve the Skewers

Remove the skewers from the grill and let them rest for a few minutes. Serve hot on a platter with your choice of dipping sauce, such as a garlic aioli or spicy salsa.
