Tres Leches Cake

    Prepare the Cake Batter

    Preheat the oven to 350°F (175°C). In a large bowl, combine flour, baking powder, and salt. In another bowl, beat the eggs and sugar until light and fluffy, then mix in the milk and vanilla. Gradually add the dry ingredients to the wet mixture until just combined.

    Bake the Cake

    Pour the batter into a greased 9x13 inch baking dish. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool.

    Prepare the Milk Mixture

    In a medium bowl, whisk together the sweetened condensed milk, evaporated milk, and heavy cream. Once the cake is cooled, poke holes all over the top with a fork and pour the milk mixture over the cake.

    Chill and Serve

    Refrigerate the cake for at least 2 hours or overnight. Serve chilled, optionally topped with whipped cream.

Coconut Flan

    Prepare the Caramel

    In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves, then stop stirring and let it boil until it turns a golden color. Quickly pour the caramel into a flan mold, tilting to coat the bottom.

    Blend the Flan Mixture

    In a blender, combine sweetened condensed milk, coconut milk, eggs, vanilla extract, and blend until smooth.

    Bake the Flan

    Pour the flan mixture over the set caramel in the mold. Place the mold in a larger baking dish filled with water (water bath) and bake at 350°F (175°C) for about 50-60 minutes or until set. Let it cool completely.

    Serve

    Once cooled, run a knife around the edges and invert the flan onto a serving plate. Slice and serve chilled.

Chocolate Devil's Cake

    Prepare the Cake Batter

    Preheat the oven to 350°F (175°C). In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, combine eggs, milk, oil, and vanilla. Mix the wet ingredients into the dry ingredients until well combined.

    Add Boiling Water

    Carefully stir in boiling water until the batter is smooth; it will be thin. Pour the batter into greased cake pans.

    Bake the Cake

    Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for a few minutes, then transfer to wire racks to cool completely.

    Once cooled, frost with your choice of chocolate frosting and serve. Enjoy the decadence!
