Homemade Tortilla Chips

Method

Queso Dip

    Prepare the Cheese Base

    In a medium saucepan over low heat, combine the Velveeta cheese and cream cheese until melted and smooth.

    Mix Ingredients

    Stir in the salsa, chopped jalapeños, ground cumin, and salt. Mix until evenly combined.

    Heat Thoroughly

    Continue to heat on low until the dip is hot and bubbly, stirring occasionally.

Pico de Gallo

    Combine Ingredients

    In a mixing bowl, combine the diced tomatoes, red onion, cilantro, lime juice, and salt.

    Mix Well

    Toss gently until all ingredients are well coated with lime juice and evenly mixed.

    Chill

    Let the Pico de Gallo sit in the refrigerator for at least 15 minutes before serving to allow flavors to meld.

Tomatillo Green Chili Sauce

    Cook Tomatillos

    In a saucepan, combine the diced tomatillos, green chili peppers, garlic, and onion. Bring to a simmer over medium heat.

    Simmer

    Reduce heat and let simmer for about 10 minutes, until tomatillos are soft.

    Blend Sauce

    Remove from heat, add cilantro and lime juice, then blend until smooth using an immersion blender or regular blender.

    Add salt to taste and mix well. Allow to cool slightly before serving.

Homemade Tortilla Chips

    Prepare the Tortillas

    Cut each corn tortilla into 6 wedges to form chips.

    Heat Oil

    In a large frying pan, heat vegetable oil over medium-high heat until hot.

    Fry the Chips

    Working in batches, fry the tortilla wedges in hot oil until golden and crispy, about 2-3 minutes.

    Drain and Season

    Remove chips with a slotted spoon and drain on paper towels. Immediately sprinkle with salt while still hot.

Salsa de Mesa

    Combine Ingredients

    In a bowl, mix together tomato sauce, chili powder, garlic powder, onion powder, cilantro, and salt.

    Stir Well

    Stir until all ingredients are combined and smooth.

    Chill

    Let sit in the refrigerator for at least 30 minutes to allow flavors to develop before serving.
