Prepare the Chorizo

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo sausage. Cook until browned and fully cooked, about 5-7 minutes. Use a spatula to break it up as it cooks.

    Add Aromatics

    Once the chorizo is cooked, add the diced onion, minced garlic, and diced jalapeño to the skillet. Sauté until the onion is translucent and soft, about 3-4 minutes.

Melt the Cheese

    Combine the Cheeses

    In a medium mixing bowl, combine the Chihuahua cheese and Monterey Jack cheese. Mix well to combine.

    Layer in Skillet

    Reduce the heat to low. Spread the chorizo and onion mixture evenly in the skillet. Sprinkle the cheese mixture over the top.

    Melt the Cheese

    Cover the skillet with a lid and allow the cheese to melt, about 5-7 minutes. Keep an eye on it to prevent burning.

Serve

    Prepare the Tortillas

    While the cheese is melting, warm the corn tortillas in a separate skillet or on a tortilla warmer until soft and pliable.

    Once the cheese is melted and bubbly, remove from heat. Garnish with chopped cilantro. Serve immediately with warm tortillas and lime wedges on the side.
