Gather Ingredients
Collect all ingredients and optional items you would like to include.

Grate Cheeses
Grate the Cheddar and Monterey Jack cheeses and mix them in a bowl.
Cooking

Heat Oil
In a non-stick skillet, heat olive oil over medium heat.

Assemble Quesadilla
Place one tortilla in the skillet, sprinkle a quarter of the cheese mixture over half of the tortilla. Fold the other half over the cheese.

Cook Quesadilla
Cook for about 2-3 minutes or until the bottom is golden and the cheese begins to melt. Flip the quesadilla carefully and cook for another 2-3 minutes until the other side is golden and the cheese is fully melted.

Repeat
Remove the cooked quesadilla from the skillet and keep warm. Repeat the process with the remaining tortillas and cheese mixture.
Serving

Slice and Serve
Cut each quesadilla into wedges. Serve with salsa, sour cream, and jalapeños on the side.
