Chicken Tinga

    Cook the Chicken

    In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1 minute.

    Add Chicken

    Add the boneless, skinless chicken thighs to the skillet. Season with cumin, salt, and black pepper. Cook until the chicken is browned on both sides, about 5-7 minutes.

    Prepare Sauce

    Stir in the chipotle peppers and tomato sauce. Bring to a simmer and cover the skillet. Cook for 15-20 minutes, or until the chicken is cooked through and tender.

    Shred Chicken

    Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and stir to coat with the sauce. Simmer for an additional 5 minutes.

House Made Slaw

    Combine Ingredients

    In a large bowl, combine shredded cabbage, shredded carrot, and chopped cilantro.

    Make Dressing

    In a small bowl, whisk together lime juice, olive oil, salt, and black pepper until well combined.

    Toss Slaw

    Pour the dressing over the cabbage mixture and toss to combine thoroughly. Adjust seasoning with additional salt and pepper to taste.

Assembly

    Plate the Dish

    To serve, place a generous portion of the chicken tinga on a plate or in a bowl.

    Add Slaw

    Top the chicken with a handful of the house made slaw.

    Sprinkle shredded queso Chihuahua, fresh cilantro, and diced red onion over the top as garnish.
