Prepare the Ribs

Season the Ribs
Rub the baby back ribs with salt, black pepper, garlic powder, and onion powder on all sides.

Slow Cook the Ribs
Place the seasoned ribs in a slow cooker. Cook on low for 6-8 hours or until the ribs are tender.
Prepare Chipotle BBQ Sauce

Combine Ingredients
In a medium saucepan, combine ketchup, brown sugar, apple cider vinegar, chipotle peppers, Worcestershire sauce, smoked paprika, salt, and black pepper.

Simmer Sauce
Bring the mixture to a simmer over medium heat while stirring occasionally. Reduce heat and let it simmer for about 15-20 minutes until slightly thickened.
Prepare Yucca Fries

Prep the Yucca
Peel the yucca root and cut it into fry-sized pieces.

Boil the Yucca
Bring a pot of salted water to a boil, then add the yucca and cook for about 15-20 minutes until tender but not mushy.

Fry the Yucca
Drain the yucca and let it cool slightly. Heat olive oil in a large skillet over medium-high heat. Fry the yucca pieces until golden brown and crispy on all sides. Season with salt and black pepper to taste.
