Preparation of Meats

    Season the Meats

    In a bowl, combine salt, black pepper, garlic powder, and cumin. Rub this seasoning mixture evenly over the steak, grilled chicken breast, and chorizo.

    Cook the Steak

    Heat a grill or skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side or until desired doneness is reached. Remove from heat and let it rest for 5 minutes before slicing.

    Cook the Chicken

    On the same grill or skillet, cook the grilled chicken breast for 6-8 minutes on each side until fully cooked. Remove from the heat and let it rest before slicing.

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

Preparation of Toppings

    Prepare Sweet Plantains

    Peel and slice the sweet plantains into diagonal pieces. Heat oil in a skillet over medium heat and fry the plantain slices until they are golden brown and caramelized, about 3-4 minutes per side. Remove and drain on paper towels.

    Prepare the Other Toppings

    Dice the onions and chop the cilantro. Crumble the queso fresco into small pieces.

Assembly

    Assemble the Mixta

    Warm the corn tortillas in a dry skillet or microwave until pliable. Place a few slices of steak, grilled chicken, and chorizo in the center of each tortilla. Top with sweet plantains, diced onions, queso fresco, and cilantro.

    Add Crema

    Drizzle the crema over the top of the assembled tortillas before serving.
