Prepare the Dough

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and cinnamon. Whisk together until well blended.

    Combine Wet Ingredients

    In a separate bowl, whisk together the egg, milk, and vanilla extract. Melt the unsalted butter and add to the wet mixture, stirring to combine.

    Make the Dough

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. The dough should be slightly sticky.

Fry the Doughnuts

    In a large, deep skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Shape the Doughnuts

    Using a spoon or ice cream scoop, drop spoonfuls of dough into the hot oil, being careful not to overcrowd the pan.
