Fajitas

    Prepare the Marinade

    In a bowl, mix olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Add fish or shrimp, ensuring it is well coated. Marinate for at least 20 minutes.

    Prepare the Vegetables

    Slice bell peppers and onion into thin strips. Set aside.

    Grill the Fish or Shrimp

    Preheat a grill or grill pan over medium-high heat. Grill the marinated fish or shrimp for about 3-5 minutes per side or until fully cooked. Remove and let rest.

    Sauté the Vegetables

    In the same grill or a separate pan, add a little olive oil if necessary, and sauté the bell peppers and onion until soft and slightly charred, about 5-7 minutes.

    Assemble the Fajitas

    Warm the tortillas on the grill or in a skillet. Fill each tortilla with grilled fish or shrimp and sautéed vegetables. Serve immediately.

    In a saucepan, heat olive oil over medium heat. Add diced onion and minced garlic, and cook until translucent, about 3-4 minutes.

    Stir in the black beans and cumin. Cook for 5-7 minutes until heated through. Season with salt to taste.

House White Rice

    Cook the Rice

    In a pot, combine white rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and water is absorbed. Fluff with a fork before serving.
