Fish Preparation

    Marinate the Fish

    In a bowl, mix together olive oil, salt, black pepper, and lemon juice. Add the salmon fillets to the mixture and coat them evenly. Let them marinate for at least 15 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Place the marinated salmon fillets on the grill and cook for about 4-5 minutes on each side or until cooked through and flaky.

Aguachile Sauce Preparation

    Prepare the Sauce

    In a blender, combine fresh cilantro, lime juice, jalapeño (seeded for less heat if desired), cucumber (peeled and chopped), red onion (sliced), and salt. Blend until smooth.

Roasted Veggies Preparation

    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Chop the bell peppers, zucchini, and carrots into bite-sized pieces.

    Roast the Vegetables

    In a large bowl, toss the chopped veggies with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for about 20-25 minutes, or until tender and slightly charred.

Assembly

    Plate the Dish

    On a serving plate, spread a generous amount of aguachile sauce. Place the grilled salmon fillet on top and arrange the roasted veggies around it. Garnish with extra cilantro if desired.
