Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well.

    Incorporate Butter

    Cut the unsalted butter into small pieces and add to the flour mixture. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

    Add Wet Ingredients

    In a separate bowl, whisk together the egg yolk and cold water. Gradually add to the flour mixture, mixing until a dough forms.

    Knead and Chill

    Knead the dough on a floured surface for about 5 minutes, or until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Filling

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until soft, about 5 minutes.

    Add Meat and Spices

    Add the ground beef or chicken to the skillet. Cook until browned. Stir in the garlic, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, then remove from heat and let cool.

Assembling Empanadas

    Roll out the Dough

    Once the dough has chilled, divide it into two portions. Roll out one portion on a floured surface to about 1/8 inch thick.

    Cut Circles

    Using a round cutter (about 4-6 inches in diameter), cut out circles from the rolled dough.

    Fill Empanadas

    Place a spoonful of the filling in the center of each circle. Be careful not to overfill.

    Seal the Empanadas

    Fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal, and use a fork to crimp the edges for a decorative finish.

    Apply Egg Wash

    Brush the tops of the empanadas with the beaten egg to give them a golden finish.

Cooking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Bake Empanadas

    Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes, or until golden brown.
