Prepare the Tortillas
Cut each corn tortilla into 6 wedges to form chips.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium heat until hot, around 350°F (175°C).

Fry the Chips
Carefully add the tortilla wedges in batches to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy.

Drain and Season
Remove the chips with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

Mix the Salsa
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño pepper, and chopped cilantro.

Season the Salsa
Squeeze the juice of the lime over the mixture, add the salt, and stir well to combine all the ingredients.

Let it Sit
Allow the salsa to sit for at least 10 minutes to let the flavors meld together before serving.
