Preheat Oven
Preheat your oven to 350°F (175°C).

Prepare Chicken Filling
In a mixing bowl, combine the shredded cooked chicken with 1 cup of shredded cheese and 1/2 cup of enchilada sauce. Mix well until the chicken is evenly coated.

Prepare Tortillas
Warm the flour tortillas in a microwave for about 30 seconds or until pliable. This will help them roll without cracking.
Assembly

Fill Tortillas
Take a tortilla and place about 1/4 cup of the chicken filling in the center. Roll the tortilla tightly around the filling and place it seam-side down in a greased 9x13 inch baking dish.

Repeat
Repeat the filling and rolling process with the remaining tortillas and chicken filling, placing each rolled tortilla side by side in the baking dish.
Cooking

Add Sauce
Pour the remaining enchilada sauce evenly over the rolled tortillas in the baking dish. Sprinkle the remaining 1 cup of shredded cheese on top.

Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
Serving

Garnish and Serve
Remove from the oven and let cool for a few minutes. Serve warm, topped with sour cream if desired.
