Marinate the Steak
In a mixing bowl, combine olive oil, minced garlic, lime juice, cumin, chili powder, salt, and black pepper. Add the flank steak and turn to coat. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Cheese Enchilada

Fill and Roll
Place a portion of the sautéed onion and shredded cheese in each tortilla, roll tightly, and place seam-side down in a baking dish. Repeat until all tortillas are filled.

Bake the Enchiladas
Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with any leftover cheese. Bake for 20-25 minutes until the cheese is melted and bubbly.

Prepare the Crema
In a small bowl, mix together sour cream, lime juice, and salt until well combined. Adjust seasoning to taste and set aside.

Sauté the Rajas
In a skillet, heat olive oil over medium heat. Add the sliced poblano peppers and onion, sautéing until the peppers are tender and slightly charred, about 7-10 minutes. Season with salt and stir to combine.
Guacamole

Make the Guacamole
In a mixing bowl, mash the avocados with a fork. Add diced tomato, finely chopped onion, cilantro, lime juice, and salt. Mix until combined but still chunky. Adjust lime and salt to taste.
