Method
Marinade Preparation
- 1
Prepare the Marinade
In a mixing bowl, combine lime juice, olive oil, minced garlic, ground cumin, chili powder, salt, black pepper, and chopped cilantro. Whisk together until well combined.
- 2
Marinate the Steak
Place the flank steak in a large resealable plastic bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish, and refrigerate for at least 2 hours or up to overnight for the best flavor.
Cooking Rice and Beans
- 3
Cook the Rice
In a medium saucepan, combine the white rice and 2 cups of water. Add 0.5 tsp of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
- 4
Heat the Beans
In a small saucepan, add the canned black beans (drained and rinsed) and heat over medium heat. Stir occasionally and cook for about 5-7 minutes until warmed through. You can add a little olive oil for flavor if desired.
Grilling the Steak
- 5
- 6
Grill the Steak
Remove the flank steak from the marinade and let any excess drip off. Place it on the hot grill. Grill for about 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130°F for medium-rare).

- 8
Slice and Serve
Slice the steak against the grain into thin strips. Serve with the rice and beans on the side.
