Preparing the Birria

Prepare the Chiles
Remove stems and seeds from the dried guajillo and ancho chiles. In a dry skillet, toast the chiles over medium heat until fragrant, about 2-3 minutes.

Make the Sauce
In a blender, combine toasted chiles, chipotle peppers, garlic cloves, cumin seeds, oregano, and 1 cup of beef broth. Blend until smooth, adding more broth as needed to achieve a pourable consistency.

Sear the Ribs
Season the short ribs with salt and black pepper. In a large pot or Dutch oven, heat some oil over medium-high heat. Sear the short ribs on all sides until browned, about 4-5 minutes per side. Remove and set aside.

Serving the Birria

Prepare the Tortillas
While the birria is cooking, heat the corn tortillas in a skillet over medium heat until warm and pliable.

Assemble the Dish
Once the birria is ready, shred the meat with two forks. Place a generous amount of shredded beef on a warm tortilla, top with queso Chihuahua cheese, and fold the tortilla.
