Preparation

    Prepare the Paddlefish

    Rinse the paddlefish fillet under cold water and pat dry with paper towels. Cut into portion-sized pieces if desired.

    Make the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, salt, and black pepper until well combined.

Cooking

    Marinate the Fish

    Place the paddlefish in a shallow dish and pour the marinade over the top. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to become gray ash before cooking.

    Grill the Paddlefish

    Remove the paddlefish from the marinade and place it directly on the grill. Cook for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

Serving

    Plate the Dish

    Once grilled, remove the paddlefish from the grill and let it rest for a few minutes. Serve with lemon wedges and garnish with fresh dill if desired.
