Prepare Potatoes

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Wash and dry the russet potatoes. Prick each potato several times with a fork. Rub the potatoes with olive oil, then sprinkle them with salt and black pepper.

    Initial Bake

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender when pierced with a fork.

    Cool and Prepare for Second Bake

    Remove the potatoes from the oven and let them cool for about 10 minutes until they can be handled.

Make Filling

    Scoop Out Potatoes

    Once the potatoes are cool enough to handle, cut each potato in half lengthwise. Carefully scoop out the insides into a mixing bowl, leaving a thin layer of potato on the skin.

    Combine Filling Ingredients

    To the bowl with the potato insides, add the cooked bacon (chopped), minced garlic, sour cream, shredded cheddar cheese, chopped chives, chopped parsley, and butter. Mix well until all ingredients are combined and creamy.

Final Bake

    Fill Potato Skins

    Spoon the filling back into the potato skins, packing them tightly.

    Add Toppings

    Sprinkle the additional shredded cheddar cheese on top of each filled potato skin. Then sprinkle with chopped chives and paprika.

    Return the filled potatoes to the oven and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly.
