Add Broth and Wine
Once the onions are caramelized, add the white wine, beef broth, thyme, bay leaves, salt, and pepper. Bring the mixture to a simmer and let it cook for 20 minutes.

Prepare Bread and Cheese
While the soup is simmering, preheat the broiler. Place baguette slices on a baking sheet and broil until toasted. Remove from oven and top with shredded Gruyère cheese.

Add Tomato Paste and Wine
Stir in the tomato paste and cook for 2 minutes. Then, add the white wine and bring to a boil. Reduce heat and simmer for 5 minutes.

Add Stock and Cream
Pour in the fish stock and bring to a simmer. Stir in the heavy cream, salt, and pepper, then add the chopped lobster. Cook for another 10 minutes.

Blend and Serve
Use an immersion blender to puree the bisque until smooth. Serve hot, garnished with chopped chives.
Carrot Ginger Soup

Add Carrots and Broth
Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until the carrots are tender, about 20 minutes.

Blend and Add Coconut Milk
Use an immersion blender to puree the soup until smooth. Stir in the coconut milk, salt, and pepper, heating through for an additional 5 minutes.

Ladle the soup into bowls and serve hot.
