French Onion Soup

Method

French Onion Soup

    Sauté Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Broth and Wine

    Once the onions are caramelized, add the white wine, beef broth, thyme, bay leaves, salt, and pepper. Bring the mixture to a simmer and let it cook for 20 minutes.

    Prepare Bread and Cheese

    While the soup is simmering, preheat the broiler. Place baguette slices on a baking sheet and broil until toasted. Remove from oven and top with shredded Gruyère cheese.

    Finish Soup

    Remove bay leaves and thyme sprigs from the soup. Ladle the soup into bowls, top with toasted baguette slices, and place under the broiler until the cheese is bubbly and golden.

Lobster Bisque

    Sauté Aromatics

    In a large saucepan, melt the butter over medium heat. Add shallots and garlic, sautéing until softened, about 5 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Then, add the white wine and bring to a boil. Reduce heat and simmer for 5 minutes.

    Add Stock and Cream

    Pour in the fish stock and bring to a simmer. Stir in the heavy cream, salt, and pepper, then add the chopped lobster. Cook for another 10 minutes.

    Blend and Serve

    Use an immersion blender to puree the bisque until smooth. Serve hot, garnished with chopped chives.

Carrot Ginger Soup

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add onions, garlic, and ginger, cooking until fragrant, about 5 minutes.

    Add Carrots and Broth

    Add the chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until the carrots are tender, about 20 minutes.

    Blend and Add Coconut Milk

    Use an immersion blender to puree the soup until smooth. Stir in the coconut milk, salt, and pepper, heating through for an additional 5 minutes.

    Serve

    Ladle the soup into bowls and serve hot.
