Prepare the Lobster
Start by preheating your oven to 425°F (220°C). Rinse the lobster tails under cold water and pat them dry with paper towels. Using kitchen scissors, carefully cut the top shell of each lobster tail down the middle, stopping just before the tail fin.

Season the Lobster
In a small bowl, mix together the lemon pepper seasoning, achiote paste, and olive oil to form a marinade. Mince the garlic cloves and add them to the mixture. Rub this marinade generously over the exposed lobster meat, ensuring it’s well coated.

Roast the Lobster
Place the lobster tails on a baking sheet, cut side up. Squeeze the juice of half a lemon over the tails and sprinkle with salt. Roast in the preheated oven for about 15-20 minutes or until the lobster meat is opaque and cooked through.

Garnish and Serve
Once cooked, remove the lobster tails from the oven. Garnish with chopped fresh parsley and serve with lemon wedges on the side for extra flavor.
