Method

Preparation

  1. 1

    Wash and Cut Potatoes

Thoroughly wash the Russet potatoes under cold water to remove any dirt. Slice each potato into long, thin strips, approximately 1/4 inch wide.

  2. 2

    Soak Potatoes

Place the cut potato strips in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps to achieve a crispier fry.

Cooking

  1. 3

    Heat the Oil

In a large, heavy-bottomed pot or deep fryer, pour in the vegetable oil and heat it to 325°F (163°C). Use a thermometer to check the temperature for accuracy.

  2. 4

    Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

  3. 5

    First Fry

Carefully add a handful of the dried potato strips into the hot oil. Fry them for about 5-6 minutes until they are soft but not browned. Remove them with a slotted spoon and drain on paper towels. Repeat with the remaining potatoes.

  4. 6

    Increase Oil Temperature

Increase the oil temperature to 375°F (190°C).

  5. 7

    Second Fry

Once the oil reaches the higher temperature, return the fries to the pot in batches. Fry them for an additional 2-3 minutes or until golden brown and crispy. Remove and drain on fresh paper towels.

  6. 8

    Season the Fries

While the fries are still hot, sprinkle them with sea salt and any additional seasonings like garlic powder, paprika, or fresh herbs if desired.
