In a large skillet, cook the diced bacon over medium heat until crispy. Add the chopped onion and sauté until translucent.

In a mixing bowl, combine the grated potatoes, cooked bacon and onion, eggs, salt, black pepper, nutmeg, cream, and chopped chives. Mix thoroughly.
