Prepare the Fish
Rinse the Northern Divine White Sturgeon fillets under cold water and pat them dry with paper towels. Season both sides with sea salt and freshly ground black pepper.

In a large skillet, heat olive oil over medium heat. Once hot, add the unsalted butter. Allow it to melt and foam.

Cook the Sturgeon
Place the seasoned sturgeon fillets in the skillet, skin side down. Cook for about 4-5 minutes on each side, depending on the thickness of the fillets, until they are golden brown and cooked through.

During the last minute of cooking, drizzle the fresh lemon juice over the fillets and sprinkle with chopped fresh dill and capers.
