    Prepare the Steak

    Remove the New York strip steaks from the refrigerator and allow them to come to room temperature for about 30 minutes. This ensures even cooking.

    Season the Steak

    Pat the steaks dry with paper towels. Drizzle olive oil over both sides of the steaks. Season generously with salt, black pepper, and garlic powder. Rub the seasonings into the meat. The rosemary can be chopped and sprinkled on top or left whole.

Grilling

    Preheat the Grill

    Preheat your grill to high heat (about 450°F to 500°F). If using a charcoal grill, allow the coals to burn down until they are covered with white ash.

    Grill the Steak

    Place the seasoned steaks on the grill. Grill for 4-5 minutes on one side without moving them. Flip the steaks and grill for another 4-5 minutes for medium-rare, or adjust the time for your desired doneness.

    Check Doneness

    Use a meat thermometer to check the internal temperature. For medium-rare, aim for about 135°F. If you prefer your steak more done, adjust the grilling time accordingly.

    Rest the Steak

    Once cooked to your liking, remove the steaks from the grill. Allow them to rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute.
