    Prepare the Lamb

    Preheat your oven to 160°C (320°F). Rub the lamb shoulder with olive oil, minced garlic, chopped rosemary, salt, and black pepper. Make sure to cover the entire surface.

    Prepare the Vegetables

    Peel and chop the carrots and potatoes into large chunks. Slice the onion into wedges.

    Sear the Lamb

    In a large skillet, heat a bit of olive oil over medium-high heat. Sear the lamb shoulder on all sides until browned, about 4-5 minutes per side.

    Roast the Lamb

    Transfer the seared lamb to a roasting pan. Surround it with the chopped carrots, potatoes, and onion. Pour the chicken broth over the vegetables. Cover the pan with foil and place it in the preheated oven.

    Cook

    Roast for about 2.5 to 3 hours, or until the lamb is tender and easily pulls apart with a fork. Remove the foil for the last 30 minutes of cooking.

    Once cooked, remove the lamb from the oven and let it rest for 15 minutes before carving. Serve with chopped fresh parsley and lemon wedges on the side.
