    Prepare the Ingredients

    Wash and chop the fresh parsley, dice the onion, mince the garlic, and chop the tomatoes and bell pepper.

    Soak the Rice

    Rinse the rice under cold water until the water runs clear. Soak in water for about 30 minutes, then drain.

Cooking

    Cook the Lamb

    In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant and translucent. Add the lamb, season with salt, black pepper, cinnamon, and allspice. Brown the lamb on all sides.

    Add Tomatoes and Bell Pepper

    Add the chopped tomatoes and bell pepper to the pot and stir everything together. Allow to cook for about 5 minutes until the vegetables soften.

    Cook the Rice

    Add the soaked and drained rice to the pot, stirring to combine. Add enough water to cover the rice by about an inch. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is tender and the liquid is absorbed.

    Finish the Dish

    Once cooked, remove from heat and let it sit covered for an additional 10 minutes. Fluff the rice with a fork, and mix in chopped parsley and lightly toasted pine nuts.
