Preparing the Amber Pearls

Cook the Tapioca Pearls
In a medium saucepan, bring 4 cups of water to a rolling boil. Add 1 cup of amber pearls to the boiling water and stir gently to prevent sticking. Reduce the heat to medium and cook for 15-20 minutes until the pearls become translucent and chewy.

Drain and Rinse
Once cooked, remove the saucepan from heat. Drain the pearls and rinse them under cold water to stop the cooking process. Set aside.
Making the Nutty Creamy Mixture

Combine Ingredients
In a blender, combine 1 can of coconut milk, 3 tablespoons of almond butter, 2 tablespoons of honey or maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Adjust Consistency
If the mixture is too thick, add a little water (1-2 tablespoons) to reach your desired consistency. Blend again to combine.
Assembling the Dish

Combine Pearls and Creamy Mixture
In a large bowl, combine the cooked amber pearls with the nutty creamy mixture. Stir gently to coat the pearls evenly.

Serve the mixture in individual bowls and top with chopped almonds, fresh berries, and chia seeds. Enjoy immediately!
