Method
Lobster Cooking
- 1
Boil the Lobster
Fill a large pot with 2 liters of water and add 2 tablespoons of sea salt. Bring the water to a rolling boil over high heat.
- 2
Cook the Lobster
Once the water is boiling, carefully add the whole Maine lobster. Cover the pot with a lid and let the lobster cook for 10-12 minutes or until it turns bright red.
- 3
Cool and Prepare
Remove the lobster from the pot using tongs and place it in a bowl of ice water to stop the cooking process. After a few minutes, remove it and place it on a cutting board.
- 4
Split the Lobster
Using a sharp knife, carefully split the lobster in half lengthwise, from the head to the tail. Remove the tomalley (green liver) and any other inedible parts.
Butter Sauce Preparation
- 5
Melt the Butter
In a small saucepan over medium heat, melt 1 cup of unsalted butter gently. Avoid boiling to prevent burning.
- 6
Add Garlic
Once the butter is melted, add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant but not browned.
- 7
Finish the Sauce
Stir in 2 tablespoons of freshly chopped parsley, 1 tablespoon of lemon juice, and 1 teaspoon of black pepper. Mix well and remove from heat.
