Add Garlic and Deglaze
Add the minced garlic to the pot and cook for an additional 2 minutes. Pour in the dry white wine, scraping the bottom of the pot to deglaze. Let it simmer until the wine reduces by half.

Add Broth and Seasonings
Stir in the beef broth, thyme leaves, bay leaf, salt, and black pepper. Bring the soup to a gentle simmer and let it cook for about 20 minutes.

Prepare for Baking
Remove the bay leaf and ladle the soup into oven-safe bowls. Top each bowl with shredded Gruyère and grated Parmesan cheese.

Broil the Soup
Place the bowls under the broiler in your oven for about 5-7 minutes, or until the cheese is bubbly and golden brown.

Toast the Bread
While the soup is broiling, brush the spelt bread slices with olive oil and place them on a baking sheet. Bake in the oven at 375°F (190°C) for 10-12 minutes, or until they are golden and crispy.

Once toasted, take the whole garlic cloves and rub them over the warm spelt toasts to impart a subtle garlic flavor.
